In many cases the latest backup is sufficient. However there are cases where you definitely want to access an older backup, specifically when not much is going on on the website, it perhaps it not updated regularly and there was a vulnerability and the site got attacked, infected, etc.
Having access to older backups for restore would help.
Keeping ALL backups though from the last 3 months would require too much storage
